You will love Jackfruit Sabji for its meaty texture and the way it absorbs the flavors of the aromatic spices. The combination of jackfruit with a robust masala base creates a hearty and satisfying dish that pairs well with rice or Indian breads.
Key Ingredient:
Young Jackfruit (Kathal)
Ingredients:
- 500 grams young jackfruit (kathal), peeled and diced
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
- Prepare the Jackfruit: Peel the outer skin of the jackfruit and remove the core. Cut the jackfruit into small pieces and soak them in water to prevent oxidation.
- Cook the Onions and Spices: Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown.
- Add Ginger-Garlic Paste and Green Chilies: Add ginger-garlic paste and slit green chilies to the pan. Sauté for a minute until fragrant.
- Add Tomatoes: Add chopped tomatoes to the pan. Cook until they turn soft and mushy.
- Cook the Jackfruit: Drain the soaked jackfruit and add it to the pan. Mix well with the masala.
- Add Spices: Add turmeric powder, coriander powder, red chili powder, garam masala, and salt to the pan. Mix well to coat the jackfruit pieces evenly with the spices.
- Simmer and Cook: Cover the pan and cook on low heat for 15-20 minutes, or until the jackfruit is tender and cooked through. Stir occasionally to prevent sticking and burning. If needed, sprinkle a little water to prevent drying.
- Check Seasoning: Taste and adjust salt and spice levels according to your preference.
- Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with roti, paratha, or rice.
- Choose tender young jackfruit for the best texture and taste.
- You can add a tablespoon of yogurt or coconut milk for a creamy variation.
- Jackfruit Sabji tastes even better when allowed to sit for a while before serving, allowing the flavors to meld together.
