Ingredients:
⦁ 500 grams bombil fish (Bombay duck), cleaned and cut into pieces
⦁ 2 onions, finely chopped
⦁ 1 tomato, chopped
⦁ 1/2 cup grated coconut
⦁ 2 tablespoons oil
⦁ 1 teaspoon mustard seeds
⦁ 1 teaspoon cumin seeds
⦁ 1 teaspoon turmeric powder
⦁ 2 tablespoons Nalini Kaku’s Fish Masala
⦁ 1 tablespoon red chili powder
⦁ 1 tablespoon ginger-garlic paste
⦁ Salt to taste
⦁ Tamarind pulp (size of a lemon)
⦁ Fresh coriander leaves for garnish
Instructions:
⦁ Prepare the Coconut Paste: Roast the grated coconut in a pan until it turns golden brown. Let it cool and grind it into a fine paste with a little water. Set aside.
⦁ Marinate the Fish: In a bowl, marinate the bombil fish pieces with turmeric powder, red chili powder, and salt. Let it rest for 10 minutes.
⦁ Cook the Onions and Spices: Heat oil in a large pan. Add mustard seeds and cumin seeds. When they start to splutter, add the chopped onions and sauté until golden brown.
⦁ Add the Tomato and Paste: Add the chopped tomato and ginger-garlic paste. Cook until the tomato softens. Then add the roasted coconut paste and cook for another 5 minutes.
⦁ Add the Fish and Spices: Add the marinated bombil fish pieces to the pan and mix well with the masala. Cook for 5 minutes, stirring occasionally.
⦁ Add Tamarind Pulp: Add the tamarind pulp and a little water to the curry. Mix well and let it simmer for 10 minutes until the fish is fully cooked and the curry reaches the desired consistency.
⦁ Garnish and Serve: Garnish with fresh coriander leaves and serve hot with rice or roti.
