⦁ 500 grams prawns, cleaned and deveined
⦁ 2 onions, finely chopped
⦁ 1 tomato, chopped
⦁ 1/2 cup grated coconut
⦁ 2 tablespoons oil
⦁ 1 teaspoon mustard seeds
⦁ 1 teaspoon cumin seeds
⦁ 1 teaspoon turmeric powder
⦁ 2 tablespoons Nalini Kaku’s Koli Masala
⦁ 1 tablespoon red chili powder
⦁ 1 tablespoon ginger-garlic paste
⦁ Salt to taste
⦁ 4-5 kokum petals (or tamarind pulp as an alternative)
⦁ Fresh coriander leaves for garnish
⦁ Few curry leaves
Instructions:
⦁ Prepare the Coconut Paste: Roast the grated coconut in a pan until it turns golden brown. Let it cool and grind it into a fine paste with a little water. Set aside.
⦁ Marinate the Prawns: In a bowl, marinate the prawns with turmeric powder, red chili powder, and salt. Let it rest for 15 minutes.
⦁ Cook the Onions and Spices: Heat oil in a large pan. Add mustard seeds and cumin seeds. When they start to splutter, add curry leaves and chopped onions. Sauté until the onions turn golden brown.
⦁ Add the Tomato and Paste: Add the chopped tomato and ginger-garlic paste. Cook until the tomato softens. Then add the roasted coconut paste and cook for another 5 minutes.
