Ingredients:
  • 500 grams chicken, cut into pieces
  • 2 onions, finely chopped
  • 1 tomato, chopped
  • 1/2 cup grated coconut
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 2 tablespoons Nalini Kaku’s Agri-Konkani Masala
  • 1 tablespoon red chili powder
  • 1 tablespoon ginger-garlic paste
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Few curry leaves
Instructions:
  • Prepare the Coconut Paste: Roast the grated coconut in a pan until it turns golden brown. Let it cool and grind it into a coarse paste with a little water. Set aside.
  • Marinate the Chicken: In a bowl, marinate the chicken pieces with turmeric powder, red chili powder, and salt. Let it rest for 15 minutes.
  • Cook the Onions and Spices: Heat oil in a large pan. Add cumin seeds and mustard seeds. When they start to splutter, add the chopped onions and sauté until golden brown.
  • Add the Tomato and Paste: Add the chopped tomato and ginger-garlic paste. Cook until the tomato softens. Then add the roasted coconut paste and cook for another 5 minutes.
  • Cook the Chicken: Add the marinated chicken pieces to the pan and mix well with the masala. Cook for 10 minutes, stirring occasionally.
  • Add Nalini Kaku’s Agri-Konkani Masala: Sprinkle Nalini Kaku’s Agri-Konkani Masala over the chicken, mix well, and cook for another 15 minutes until the chicken is fully cooked and the masala coats the chicken pieces well.
  • Garnish and Serve: Garnish with fresh coriander leaves and serve hot with rice or roti.
