Ingredients:
- 500 grams chicken, cut into pieces
- 2 onions, finely chopped
- 1 tomato, chopped
- 1/2 cup grated coconut
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 2 tablespoons Nalini Kaku’s Agri-Konkani Masala
- 1 tablespoon red chili powder
- 1 tablespoon ginger-garlic paste
- Salt to taste
- Fresh coriander leaves for garnish
- Few curry leaves
- Prepare the Coconut Paste: Roast the grated coconut in a pan until it turns golden brown. Let it cool and grind it into a coarse paste with a little water. Set aside.
- Marinate the Chicken: In a bowl, marinate the chicken pieces with turmeric powder, red chili powder, and salt. Let it rest for 15 minutes.
- Cook the Onions and Spices: Heat oil in a large pan. Add cumin seeds and mustard seeds. When they start to splutter, add the chopped onions and sauté until golden brown.
- Add the Tomato and Paste: Add the chopped tomato and ginger-garlic paste. Cook until the tomato softens. Then add the roasted coconut paste and cook for another 5 minutes.
