Nalini Kaku’s Garam Masala
Ingredients:
- 500 grams chicken, cut into pieces
- 2 onions, finely chopped
- 1 tomato, chopped
- 1/2 cup grated coconut
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 2 tablespoons Nalini Kaku’s Garam Masala
- 1 tablespoon red chili powder
- 1 tablespoon ginger-garlic paste
- Salt to taste
- Fresh coriander leaves for garnish
- Prepare the Coconut Paste: Roast the grated coconut in a pan until it turns golden brown. Let it cool and grind it into a fine paste with a little water. Set aside.
- Marinate the Chicken: In a bowl, marinate the chicken pieces with turmeric powder, red chili powder, and salt. Let it rest for 15 minutes.
- Cook the Onions and Spices: Heat oil in a large pan. Add cumin seeds and mustard seeds. When they start to splutter, add the chopped onions and sauté until golden brown.
- Add the Tomato and Paste: Add the chopped tomato and ginger-garlic paste. Cook until the tomato softens. Then add the roasted coconut paste and cook for another 5 minutes.
- Cook the Chicken: Add the marinated chicken pieces to the pan and mix well with the masala. Cook for 10 minutes, stirring occasionally.
- Add Nalini Kaku’s Garam Masala: Sprinkle Nalini Kaku’s Garam Masala over the chicken, mix well, and cook for another 15 minutes until the chicken is fully cooked and tender.
- Garnish and Serve: Garnish with fresh coriander leaves and serve hot with rice or roti.
