Why You Will Love It:
You will love Mango Malai Rabdi for its silky texture and the sweet aroma of mangoes. It's a perfect dessert to enjoy during the mango season, offering a refreshing twist to the traditional rabdi.
Key Ingredient:
Mango Puree
Ingredients:
- 1 liter full-fat milk
- 1/2 cup sugar (adjust to taste)
- 1 cup mango puree (fresh or canned)
- 1/4 cup mixed nuts (almonds, pistachios, cashews), chopped
- A pinch of saffron threads (optional)
- 1/2 teaspoon cardamom powder
- 1 tablespoon chopped mango (for garnish)
- In a heavy-bottomed pan or kadhai, bring the milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
- Once the milk comes to a boil, reduce the heat to low and simmer. Keep stirring and scraping the sides of the pan to collect the cream (malai) that forms.
- Continue simmering the milk on low heat, stirring frequently, until it reduces to about half its original volume. This process may take approximately 45 minutes to 1 hour. The milk will thicken and turn slightly creamy.
- Add sugar, cardamom powder, and saffron threads (if using) to the thickened milk. Mix well until the sugar dissolves completely.
- Add mango puree to the rabdi and stir well to combine. Cook for another 5-7 minutes on low heat, stirring continuously.
- Remove from heat and let the Mango Malai Rabdi cool to room temperature.
- Once cooled, refrigerate the rabdi for at least 2-3 hours to chill.
- Before serving, garnish Mango Malai Rabdi with chopped nuts and fresh mango pieces.
- Serve chilled Mango Malai Rabdi as a refreshing dessert after meals or during festive occasions.
- Stir the rabdi frequently to prevent it from sticking to the bottom of the pan and burning.
- Adjust the sweetness according to your taste preference by varying the amount of sugar.
- Use ripe and sweet mangoes for the best flavor in the rabdi.
