Key Ingredient:
Surmai Fish
Ingredients:
⦁ 500 grams Surmai fish steaks, cleaned and cut into pieces
⦁ 1 cup grated coconut
⦁ 2 onions, finely chopped
⦁ 2 tomatoes, chopped
⦁ 1 teaspoon ginger-garlic paste
⦁ 1 teaspoon mustard seeds
⦁ 1 teaspoon cumin seeds
⦁ 2-3 dry red chilies
⦁ 1/2 teaspoon turmeric powder
⦁ 1 tablespoon coriander powder
⦁ 1/2 teaspoon red chili powder (adjust to taste)
⦁ 1/2 teaspoon garam masala powder
⦁ Salt to taste
⦁ 2 tablespoons oil
⦁ Fresh coriander leaves for garnish
Instructions:
⦁ In a blender, grind grated coconut with a little water to make a smooth paste. Set aside.
⦁ Heat oil in a deep pan or kadhai over medium heat. Add mustard seeds and let them splutter.
⦁ Add cumin seeds and dry red chilies. Sauté for a few seconds until aromatic.
⦁ Add chopped onions to the pan. Sauté until onions turn golden brown.
⦁ Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
⦁ Add chopped tomatoes to the pan. Cook until they are soft and oil starts to separate.
⦁ Reduce the heat to low. Add turmeric powder, coriander powder, red chili powder, garam masala powder, and salt. Mix well and cook for 2-3 minutes until the spices are fragrant.
⦁ Add the ground coconut paste to the pan. Stir well to combine with the spices and cook for 5-6 minutes, stirring occasionally.
⦁ Pour 2 cups of water into the pan and bring the curry to a gentle boil.
⦁ Add Surmai fish pieces to the pan. Cover and simmer on low heat for 10-12 minutes or until the fish is cooked through and the curry has thickened slightly.
⦁ Taste and adjust salt and spice levels as needed.
⦁ Garnish with fresh coriander leaves and remove from heat.
Serving:
⦁ Serve hot Surmai Fish Curry with steamed rice or roti.
Recipe Notes:
⦁ Adjust the spice levels according to your preference.
⦁ Ensure the fish is cooked gently to prevent it from breaking apart.
⦁ Freshly ground coconut adds richness to the curry, but you can use canned coconut milk as an alternative.
