Key Ingredient:
Nalini Kaku’s Maharashtrian Masala
Ingredients:
  • 500 grams chicken, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 1/2 cup grated coconut
  • 1/2 cup coconut milk
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2 tablespoons Nalini Kaku’s Maharashtrian Masala
  • 1 tablespoon red chili powder (adjust to taste)
  • 1 tablespoon ginger-garlic paste
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Few curry leaves
Instructions:
  • Prepare the Chicken: Clean and cut the chicken into pieces. Pat dry with a paper towel.
  • Prepare the Masala Paste: In a blender, grind together grated coconut, chopped tomatoes, and Nalini Kaku’s Maharashtrian Masala to form a smooth paste. Set aside.
  • Cook the Onions and Spices: Heat oil in a large pan over medium heat. Add mustard seeds and cumin seeds. When they start to splutter, add curry leaves and chopped onions. Sauté until the onions turn golden brown.
  • Add Ginger-Garlic Paste: Add ginger-garlic paste to the pan and sauté for a minute until fragrant.
  • Add Masala Paste: Add the ground masala paste to the pan. Cook for 5-7 minutes, stirring occasionally, until the mixture thickens and the raw smell disappears.
  • Add Chicken: Add the chicken pieces to the pan. Mix well with the masala and cook for 5 minutes, allowing the chicken to brown slightly.
  • Add Coconut Milk: Pour coconut milk into the pan. Stir well to combine with the masala and chicken. Bring to a gentle simmer.
  • Simmer and Cook: Cover the pan and simmer for 15-20 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
  • Adjust Seasoning: Taste and adjust salt and spice levels as needed.
  • Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with steamed rice or chapati.
Recipe Notes:
  • Adjust the spiciness by varying the amount of red chili powder used.
  • For a thicker gravy, reduce the amount of coconut milk or simmer uncovered for longer.
This dish tastes even better the next day as the flavors continue to meld.
